Grandma Sliwa’s Potato Perogies

You can’t visit a polish household without being inundated with a supply of perogies. Finding the perfect garnish is also a task (bacon, sour cream, etc.)

Ingredients

Cover:
2 1/2 Cups Sifted All Purpose Flour
1 tsp. Baking Powder
1/2 tsp. Salt
2 eggs
1/2 cup Cooking Oil
2 teaspoons Water

Filling:
1 cup Chopped Onions
1/2 Cup Chicken Fat
2 Cups Mashed Potatoes
1 Egg Well Beaten
1 tsp. Salt
1/8 tsp. Pepper

 

Directions
  • Sauté onions & add remaining ingredients
  • Sift Flour w/ baking powder & salt. Make a well in center & add eggs, oil & water. Mix w/ the hands & then knead on a lightly floured board until smooth. Roll out dough on a lightly floured board as thin as possible.
  • Cut into 2 inch rounds.
  • Place 1 Tablespoon filling into 3 in rounds. Moisten edge of dough and pull together to enclose filling completely form a ball.
  • Cook in oven on oiled cookie sheet 350 degrees for 35min.
  • Fry in Butter & onions or Boil first and then fry.
