Plymouth Cranberry Pancakes

1 cup thinly sliced cranberries, sprinkled with 1 tsp sugar and set aside

Sift together all dry ingredients:
1 ½ cups flour
1 tsp salt
3 Tbl sugar
1 ¾ tsp baking powder
Mix all wet ingredients:
2 eggs beaten
3 Tbl melted butter
1 to 1 ¼ cups milk

Mix the liquid quickly into the dry ingredients. Fold in the cranberries and cook on a hot griddle.

Makes 14 4” cakes
