This is Nancy’s signature dish. We use it as a main course or as a side course to a hearty meal. My main goal is to get her to make, collect rave reviews for the guest meal, but then I get to have it for left-over snacks for the next several days. The dish is much better than the ingredients imply.

Directions
- Prepare Rice: Cook the rice according to the directions.
- Prepare Chicken: Cook chicken favorite way including via microwave.
- Prepare Casserole: In a large bowl, toss together the cooked rice, cooked chicken, cream of celery soup, pimentos, onion, green beans, mayonnaise, water chestnuts, salt, and pepper. Transfer to a 3 quart casserole dish. Top with sliced almonds.
- Bake: Bake in the 350 deg preheated oven for 25 to 30 minutes, or until heated through.
