Chicken Spectacular

This is Nancy’s signature dish.  We use it as a main course or as a side course to a hearty meal.  My main goal is to get her to make, collect rave reviews for the guest meal, but then I get to have it for left-over snacks for the next several days.  The dish is much better than the ingredients imply.

Ingredients
  • 3 cups chopped chicken, cooked
  • 1 package Uncle Ben’s Long-Grain and Wild Rice Mix, cooked
  • 2 cans Green Beans, French Cut, drained
  • 1 cup mayonnaise
  • 1 jar (4 oz) diced pimento peppers, optional
  • 1 onion, medium, chopped
  • 1 can cream of celery soup, drained
  • 1 can water chestnuts, sliced and drained
  • 1 salt & pepper, to taste
  • sliced almonds
Directions
  1. Prepare Rice: Cook the rice according to the directions.
  1. Prepare Chicken: Cook chicken favorite way including via microwave.
  1. Prepare Casserole: In a large bowl, toss together the cooked rice, cooked chicken, cream of celery soup, pimentos, onion, green beans, mayonnaise, water chestnuts, salt, and pepper. Transfer to a 3 quart casserole dish. Top with sliced almonds.
  1. Bake: Bake in the 350 deg preheated oven for 25 to 30 minutes, or until heated through.
